Churpi Elaboration Process
To make churpi, the milk is boiled and stirred constantly before adding lime juice, which helps separate the whey from the butter and acts as a natural preservative. Once fermented, it is wrapped in jute cloth and pressed to extract the water.
This is followed by drying and smoking for 28 days, at a controlled temperature, which gives the product extra hardness and enriches the flavor.
